Carrot cake - low fat, low sugar

Ingredients
3/4 cup Applesauce - unsweetened1/2 cup oil1/2 brown sugar or demarera sugarSugar subsitute - equivalent to 1 cup regular sugar4 eggs1 cup whole wheat flour1 cup all purpose white flour2 teaspoons cinnammon1 teaspoon baking soda3 cups grated carrot1 cup chopped nutsOptional: 1/2 cup raisons
Directions
1. Mix the oil, sugar, sugar substitute and eggs together.
2. Sieve all dry ingredients into a seperate bowl and then add to the above mixture.
3. Add the carrots, nuts and raisons..
4. Bake in a medium over (180 deg. C) for about 30 to 35 min - until a skewer put thru the middle of the cake comes out dry.

This makes about 20 slices - depending on how small you cut them!!!
