Greek Rice with a Twist

1 1/2 cups Long Grain Basmati Rice 1 teaspoon Extra Virgin Olive Oil1/8 medium onion (chopped)1 1/2 teaspoon or 1 1/2 clove garlic (chopped) 1/4 cup frozen peas & carrots 1 1/2 tsp dried mint leaves1 1/2 tsp salt1 tsp black pepper powder1 1/2 tsp Mrs. Dash Garlic & Herb Seasoning Blend1 lemon juiced
Cook rice 90% with one teaspoon salt & drain them.
In a wok heat olive oil, then add onions and garlic and stir fry for a minute. Then add the vegetables and mint and stir fry for another 2 minutes.
Now add rice, salt, black pepper powder, garlic & herb seasoning & lemon juice.
Toss well & cover & cook on medium low heat for 5-10 minutes or till the rice gets heated through.
Serve warm.
Serving Size: Makes six 3/4 cup servings
