1 cup(2 sticks) butter1/3 cup granulated sugar7 teaspoons Xylitol1/4 cup brown sugar2 large eggs1 teaspoon Vanilla Extract1 cup whole wheat flour1 1/4 cups white flour 1 teaspoon baking soda,1/2 teaspoon saltLge Hershey's Special Dark Sweet Chocolate Bar ( use 12 squares)2 cups of chopped pecans2 cups dried cranberries
Preheat oven to 375.F Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Blend in eggs and vanilla. Add flours, baking soda and salt; mix well. Stir in chocolate, pecans, and cranberries. Drop by rounded tablespoonsfuls, 1 1/2 inches apart on ungreased baking sheets.
Optional: You may decorate tops of each cookie with 1 pecan half, and a couple of dried cranberries and a white chocolate chip if you have them.
Bake for about 10 minutes, or until lightly browned. Cool 3 minutes; remove to wire racks. cool completely. Store in tightly covered container at room temperature.
