Brunch Baked Frittata

Ingredients
Eggs, 7 large Cheese - Smoked Gruyere, 4 oz - chopped or shreddedMushrooms, fresh, 2 cup, pieces or slices (10 oz package)Zucchini, about 1 cup, sliced -- 1 small/ mediumYellow Squash, about 1 cup -- 1 small/ mediumPurple onion, medium - choppedMilk, 2%, 1 cup (remove)Herbs de Provence 1/2 tsp or to tasteSalt & pepper to taste
Directions
Saute chopped veggies in oven-safe 10" skillet (spray with vegetable oil spray) until moisture rendered, and vegetables are tender.
Layer chopped cheese over vegetable layer.
Mix eggs and milk and spices; pour over vegetables and cheese.
Bake at 375 until set and golden brown
