Chicken/Shiitake Mushroom Soup

Ingredients
CeleryOnionsShiitake MushroomsChicken Breast, no skin cut into small piecesChicken BrothMiracle Noodles (Yam Noodles)Green OnionSpinachBragg's All Purpose Soy Seasoning or Soy Sauce
Directions
Chop celery, onion and mushrooms(if using fresh, if not soak mushrooms in warmed chicken broth and then chop) into small pieces.Saute celery, onions and mushrooms (if using fresh mushrooms) using a little chicken broth to deglaze pan periodically, remove from pan when soft. Brown chicken pieces in pan again deglazing pan periodically. Add chicken broth and bring to a boil, add mushrooms, celery, onions and noodles and bring to a boil. Add chopped spinach just before serving and garnish with chopped green onion, add soy to season to taste.
