Quick and Easy Curried Chicken

1 lb boneless skinless chicken breasts1 can condensed lowfat cream of mushroom soup1/2 cup golden seedless raisins1 1/2 TBS Indian curry powder1 TBS ground or dried coriander
In a casserole dish, mix undiluted soup with spices and raisins. Add chicken, turn to coat. Cover and bake at 350 degrees Fahrenheit for 40 minutes or until done. Remove chicken with slotted spoon. Remaining curry sauce is excellent, too, over rice or steamed vegetables.

EEMOLLY
I love this recipe!! I will use the Chicken partially for dinners (just serve with brown rice and veggies). Also I have started making curried chicken salad by saving remaining sauce/chicken(cut up) and adding halved grapes, celery & walnuts. Serve it on lettuce or put in a sandwhich. Mmmm.. Enjoy! - 4/4/11
