Quick and Easy Curried Chicken

Ingredients
1 lb boneless skinless chicken breasts1 can condensed lowfat cream of mushroom soup1/2 cup golden seedless raisins1 1/2 TBS Indian curry powder1 TBS ground or dried coriander
Directions
In a casserole dish, mix undiluted soup with spices and raisins. Add chicken, turn to coat. Cover and bake at 350 degrees Fahrenheit for 40 minutes or until done. Remove chicken with slotted spoon. Remaining curry sauce is excellent, too, over rice or steamed vegetables.

Serves four.

    I love this recipe!! I will use the Chicken partially for dinners (just serve with brown rice and veggies). Also I have started making curried chicken salad by saving remaining sauce/chicken(cut up) and adding halved grapes, celery & walnuts. Serve it on lettuce or put in a sandwhich. Mmmm..     The total calories should be changed. 4 oz. of skinless, boneless chicken breast is 137 calories, but according to above one serving is just 125.7 calories. WRONG - 3/20/13

    This makes a fast and easy meal with very little hands-on time. It was a little too "Americanized" for Hubby's and my tastes - our favorite restaurant is an Indian diner, so we found it hard not to compare to the "real thing." Regardless, it makes a good meal! - 2/6/08
