simple fratata

Ingredients
3 eggs beaten1tblsp EVOO1/4 large onion chopped1/2 tomato chopped2-3 cloves garlic mincedsalt and pepper to tastetapatio hot sauce to taste
Directions
saute the garlic, onions and tomato in the olive oil. when onions are translucent and tomatoes start to break down pour the beaten eggs over the mixture and cook till its half way cooked through then place it under the broiler to finish it off.
you can saute what ever veggies you like; lie spinach, broccoli or mushrooms and top it with some feta cheese before putting it under the broiler.
