Black beans with orange juice

Ingredients
3 15 oz cans of black beans2 large onions2 tbsp olive oil1 cup chopped bell pepper6 cloves garlic diced1 cup chopped tomatoes3 tbsp cider vinegar1.5 cup orange juicecumincardamomgingerchili powderred pepper flakessalt and pepper to taste
Directions
Makes 9 0.5 Cup servings

Saute chopped onions and garlic in olive oil until golden brown. Add the spices and fry for 1 minute. Add the chopped tomatoes and stir. Saute until the liquid reduces. Add the bell peppers and saute briefly until color brightens.

Empty black beans into a colander and rinse them off (they are in a glutinous liquid in the can). After they are rinsed, add them to the pot and stir all the ingredients together.

Add the orange juice and vinegar, and bring to a boil. Reduce heat and simmer until liquid reduces and thickens. Salt and pepper to taste.
