Beef Bourguignon

Beef, round steak, 1 lb Tomato Paste, 1 small can Red Wine, 8 fl oz Onions, raw, 1 large Mushrooms, fresh, 2 cup, slicesOlive Oil, 2 tbsp Corn Starch, 2 tspGarlic, 5 cloves crushedBay Leaf (optional)
Cube the beef into bite-sized pieces and soak in half the wine and 3 cloves crushed garlic.
Cut the onion in several thin slices then cut slices in half, seperating the rings
Cut the mushrooms in small slices or buy the pre-packaged sliced mushrooms
Heat One TBS of oilve oil in a large pan on low then add crushed garlic. Make sure the garlic does not brown. Add the onions and simmer until translucent, than add mushrooms.
Once the vegetables are soft, set to the side. Simmer the beef in the wine and remaining olive oil in a medium sized pot. Once the beef if cooked half through, add the vegetables, tomato paste, salt and pepper.
Allow everything to simmer so the flavors mesh together. To thicken the sauce, combine the cornstarch with a splash of hot water and add to the pot.
Serve over whole grain rice (I love Near East Whole Grains) with either a salad, green beans, or asparagus on the side. To give it a different flavor, omit/decrease the garlic, use cinnamon and allspice, and add diced potatoes.
