Almond Encrusted Tilapia

Ingredients
1 c. sliced almonds, divided in two parts1/4 c. regular or whole wheat flour4 (6 oz) tilapia fillets1/2 t. salt2 T. olive oil
Directions
1. Finely chop almonds (either by hand or with a food processor) and combine half of them with flour in shallow bowl.
2. Sprinkle fish evenly with salt, dredge in almond/flour mixture.
3. Add the olive oil to a lge heavy skillet over medium heat. Add fish and cook 4 minutes on each side or until golden brown. Remove fillets to a serving plate.
4. Add remaining 1/2 c. almonds to skillet and cook, stirring often, 1 minutes or until golden brown. Remove almonds and sprinkle over fish.

Serving Size: Makes 4 - 6 oz filets
