Avoca Scones

Ingredients
450g self raising floura pinch of baking powdera generous pinch of salt50 g caster sugar110g unsalted butter, diced1 egg lightly beaten50ml double cream or double cream alternative200ml milk (you may need a little more)1 egg beaten with 1 tbsp water to glaze (or use left over milk and egg mixture if not used up in dough)
Directions
sift flour, baking powder & salt in a bowl and stir in sugar. rub in butter until mixture ressembles fine breadcrumbs. mix beaten egg into double cream and milk mixture and making a well in centre of dry ingredients start to mix int he cliquid using a fork or a knif to create the dough. turn out dough onto a floured board and roll or flatten with the heel of your hand to 3/4 inch thick, then cut into 15 squares or using a round pastry cutter into circles. Glaze tops of scone with either milk or egg and then place onto a well greased and floured baking tray and bake on oven at 200 degrees C for 5 to 20 minutes. you can add dried fruit or lemon or orange rind, (or any other combinations of your choice) into dry ingredients to make variations.
