Spinach Egg Cups

6 slices deli ham (round)1/2 cup leaves fresh spinach6 large eggs1/4 c. shredded cheeseSalt to tastePepper to taste
Heat oven to 400 degrees.
Spray muffin tin with cooking spray. Place 1 piece of ham in the bottom of each cup. Place 3-4 leaves of spinach in each cup. Crack egg in small bowl and pour on top of ham and spinach. Salt & pepper to taste.
Place in oven and bake approx. 12 minutes for runny yolks; 14 for solid yolks. Remove from oven and immediately sprinkle with cheese.
