Primal Jerky

Ingredients
4 lb chuck roast or other cut - cut thin by the butcher or yourself. I likemine in 1 to 1 1/2 inch wide by 4-6 inches long1 cup worchestershire1 TBS onion powder1 TBS garlic powder1 tsp liquid smokesalt and pepper to tastecrushed red pepper
Directions
Place meat in gallon ziplock bag make sure to seperate the strips so they will absorb the marinade

Mix worchestershire, onion and garlic powders and liquid smoke in container - cn heat in microwave for 2-3 minutes to allow for better absorption (quicker) or use cold.

Place marinade in bag pouring over meat. Seal bag removing air. Marinade for 4-12 hours (I have done it for 34hours when life got to busy)

Place strips in dehydrator (can layer on foil lined cookie sheet and cook in 170 degree oven for 4-8 hours - but you have to keep an eye on it!)

Sprinkle with salt and pepper (sea salt and cracked pepper is good) or crushed pepper for a hotter flavor. I also like a red pepper/garlic/coarse salt mixture that is good!

Set dehydrator on highest setting and let er rip! Rotate trays after 3 hours cook time.

Remove when still flexible but cooked - may pat off excess grease with paper towels if needed. Store in freezer or fridge as there are no preservatives. Freezes well.
