Ham, leeks, tomato frittata, with corn tortillas, frijoles and cream

leeks (white and pale green; keep the dark green frozen for later chicken stock) 1 cuptomato 1 cup or about 1 medium tomatoham (I choose natural selection black forest ham) 4 slicesavocado 1canola oil 1tbspeggs 6 largecorn tortillas (6''wide) X8frijoles 8 tbspsour cream ( I used 14% mf) 8 tbsp
preheat oven at 400F
cut all the vedgies in small dices, cut the avocado in half, remove the seed and then make slices into the peel (be careful not to cut through the peel .. and cut your hand in the same occasion) !!
heat the frying pan on medium with the canola oil
add the leeks and ham
let cook until more soft
add the tomatos
beat the eggs in a bowl
Add the eggs
Stir a little bit
Put in the oven
Let cook until frim and puffy
during this time heat the tortillas (I do it directly on the oven .. without frying pan, so they are like ''grilled')
Put the tortillas in a clean towel, to keep them warm and soft... (the kind of towel I use, in the ones for drying the dishes)
heat the frijoles in the microwave
Cut the frittata in halves or quarters
Serve in plates, with the avocado half
with the tortillas and sour cream :)

if you want to cut Cal. dont use cream and frijoles. replace by tomatillos salsa or someting more light !
