Chili Lime Cilantro Chicken

2 chipotle peppers in adobo 1/2 cup cilantro leaves and tender stems 1 clove garlic, peeled 3 tablespoons fresh lime juice 3/4 teaspoon salt 3/4 teaspoon ground cumin 1/2 teaspoon ground coriander 1/2 teaspoon chili powder 1/4 teaspoon ground cinnamon 1 package of skinless, boneless chicken thighs (10 to a package)
1. In food processor, combine chipotle peppers and any sauce that clings to them, cilantro, garlic, lime juice, salt, cumin, coriander, chili powder, and cinnamon.
Put over meat, and allow to marinade about 1/2 hour. Grill or broil meat as usual.
You can chop up a couple of tomatoes and add any leftover unused marinade to make a great salsa.
Serving Size: Makes 10 servings of 1 thigh each
