Creamy Dreamy Cottage Cheese Pie

1 large egg1 tsp vanilla extract1 TB lemon juice3/4 cup crushed pineapple, in juice, drained1 pkg Knox unflavored gelatin4 packets of Equal16 oz 2% cottage cheese*****Ground cinnamon*****Note: you can use 1% or FF cottage cheese also but the pie will be softer.
Drain pineapple, reserve juice. Squeeze pineapple till pretty dry. Set aside.
In a small bowl, measure 1/4 cup of the pineapple juice, then sprinkle the unflavored gelatin on top. Let it sit a couple of minutes to soften.
In a food processor, mix the cottage cheese, egg, vanilla, lemon juice & Equal. Process until smooth. Stir in, by hand, the crushed pineapple. Pour into an ungreased pie plate. Sprinkle with ground cinnamon.
Bake 350 degrees F. for 30 minutes.
