Jody's Slow-Cooked Pepper Steak

1.25 pounds Top Sirloin Beef cut into 3 X 1 strips2 Tsp olive oil1/4 C Lite soy sauce1 C chopped onion1 garlic clove minced (optional)1 tsp sugar1/2 tsp salt1/4 tsp pepper1/4 tsp ground ginger4 tomatoes cut into 1/8ths OR 16 oz can of diced tomatoes w/ liquid2 large green peppers (or 1 according to taste)Basmati Rice- cooked separate and served in 3/4 cup
Brown Round Steak in olive oil in skillet. Put in crock pot.
Combine soy sauce, onion, garlic, sugar, salt, pepper and ginger and pour on top of meat in crock pot. Cover and cook on low 5-6 hours (till meat is tender).
Add 4 tomatoes cut into 1/8ths OR 14.5 oz can w/liquid, pepper strips and cook 1 hour longer
Serve over rice (or noodles)
Serving Size- makes 8 servings
