Deluxe Crockpot Lentil Soup

Ingredients

1-1/2 cup dry lentils sorted and rinsed2 cloves of garlic crushed, minced or pureed1/2 cup carrots finely diced2 cups frozen pepper and onion blend2 cups of potatos peeled and diced1/2 teaspoon ground ginger1 teaspoon ground cumin5 cups of water1 can (15 ounces) diced tomatoes in juice
Add all ingredients EXCEPT TOMATOES to 3-5 quart crockpot. Stir well. Cover and cook on high for 2 hours or until lentils and potatos are slightly tender. Add canned tomatoes including juice and adjust seasoning if necessary. Cook another 1 to 2 hours or until lentils are completely tender.
You don't want to add the tomatoes until the lentils are mostly done because the acid in the tomatoes hamper the cooking and the lentils (or any beans) will be tough.
Serve over rice or pasta. Or just eat by itself. A dollop of greek yogurt or sour cream adds some extra punch.
