Curried Sweet Potato Pumpkin Soup - ORGANIC

3 cups Cooked Organic Pumpkin3 Organic Sweet Potatoes1/2 Onion1 Cup Fresh SpinachCurry, Garlic Powder to taste - Garnish- (optional)1 TBSP of Plain Non-Fat Greek Yogurtsprig of Cilantro. combine and spoon on top of soup.
Add Sweet Potatoes and Organic Pumpkin to saucepan. Cook on low until Sweet Potatoes can be broken with spoon.
Add Onion.
Using an immersion blender - blend all ingredients in pot for creamy texture.
Add approximately 1 cup water and continue to simmer.
Chop fresh spinach and add (when soup is close to done)
Add curry powder, garlic, and sea salt to taste.
Remove from heat and serve.
Great when garnished with a tbsp of Greek Yogurt & Cilantro.
