Black Bean, Rice & Sausage Soup

Ingredients
1 medium onion, chopped1 large carrot, peeled or scrubbed, chopped1 stalk of celery, sliced2 large cloves of garlic, minced1/2 tsp dried oregano1 large potato, peeled, diced2 cups beef or chicken broth (lower sodium)3 Cups diced tomatoes2 Cups stewed tomatoes15 oz chorizo sausage, fried & crumbled2 Cups black beans2 Cups cooked brown rice
Directions
COOK SAUSAGE: Heat skillet, remove skin from Chorizo & pan fry, crumble sausage
PREPARE SOUP:
1. Heat large pot with low fat cooking spray. Add onion, carrot and celery; cook and stir over medium heat until vegetables begin to soften.
2. Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in Kielbasa. Cover and simmer gently for at least 1/2 hour to blend flavours.
3. Drain and rinse beans. Add to soup. Heat until hot. Add salt and pepper to taste. (or other seasonings)
4. Add cooked brown rice to soup & let heat through.
