Christmas Brunch Frittata

Ingredients
8 large eggs1/2 cup shredded cheese2 tbsp. butter1/4 cup chopped green onions2 cups chopped red and green bell peppers1/2 tsp. salt1/8 tsp. pepper1/2 cup Hormel real bacon bits, 30% less fat
Directions
Makes 8 servings.

1. Beat together eggs, salt, and pepper.
2. Melt butter over medium heat in a 10 inch skillet that's both oven proof and nonstick. Add green onions (setting aside a pinch for garnish) and peppers. Saute until tender. Pour eggs over peppers and onions.
3. Cover and cook it all over a medium-low heat for about 9 minutes. Make sure the eggs are set (look for a lightly browned bottom.) Turn oven on to broil.
4. Move the frittata from stovetop to oven and broil top about 5 inches from the heat until lightly browned.
