"Fast" Slow Cooker Corn Chowder

Ingredients
3 c diced potatoes16 oz frozen kernel corn1/2 c 1% milk1 large red pepper3 stalks celery16 oz vegetable broth1/2 c scallions2 tbsp canola or olive oil6 slices turkey bacon, cooked and crumbledSalt and pepper to taste
Directions
Peel and steam or boil potatoes until soft. Mash with milk and set aside. Cut vegetables into bite-sized pieces. Heat oil in skillet and cook turkey bacon. Add vegetables and saute until just soft. In slow cooker, combine vegetable broth and then the mashed potatoes. Stir in frozen corn, sauted vegetables and cooked turkey bacon. Cook on high for one hour or until the corn is cooked through. Add salt and pepper as desired to individual servings
