Ricotta Cheese Pancakes - Light

1 large egg1 teaspoon maple syrup1 teaspoon canola oil1 tablespoon plus 1 teaspoon white flour3/4 teaspoon baking powderSprinkling of cinnamon or nutmegDash of salt1/3 cup of fat-free ricotta cheese
Stir the egg mixture into the flour mixture. Some lumps should remain. Stir in the ricotta cheese so that it is incorporated into the batter.
Pour into pre-heated, oiled cast iron or heavy skillet. When bubbles appear, flip. Cook a minute or less and place on plate.
Top with natural applesauce, jam or other topping.
You can substitute 1/4 tsp vanilla for the maple syrup.
