Zesty Sausage Lasagna

2- 6oz tubs Non-fat Ricotta Cheese2- 26oz. Spaghetti Sauce2-Bob Evans Zesty Roll Sausage1-8 oz. block of Part-Skim Mozzarella Cheese1-8 oz. block of Colby-Jack Cheese4 large eggs.
Preset oven to 350 F
Brown sausage or other meat in frying pan, add 2 jars of your favorite sauce, simmer. Shred the block of colby, and one block of the mozzarella and mix together lightly, put half of this mixture aside.
Empty the contents of the ricotta cheese into a big mixing bowl add the other half of the shredded cheese, and the eggs, mix thoroughly.
In the bottom of a 13X8X2 casserole dish spoon meat/sauce mixture, layer three UNCOOKED noodles, ricotta mixture, a sprinkle of the left over shredded cheese, repeat for 3 layers, layer the rest of the cheese to the top, cover with foil. Cook for 45 mins covered with foil atop a baking sheet. Uncover carefully (cheese will stick, some non-cook spray on the foil sometimes alleviates this) cook for additional 10 mins. Remove carefully and let sit for 5-10 mins.
Makes 8 generous slices.
