Italian Chicken with veggies and spaghetti squash

Ingredients
Chicken breasts - 5 individual breasts1 T olive Oil1 large spaghetti squash1 cup onions, chopped1 cup peppers, chopped1 cup broccoli, cut into small pieces1 cup cauliflower, cut into small pieces1/2 cup carrots, chopped1 cup mushrooms, sliced1 T basil1 T oregano1 jarf marinara sauce2 T parmesan cheese
Directions
Split spaghetti squash, remove seeds, place upside down in roasting pan and cook at 375 F for 45 minutes.

Put olive oil into pan, heat, then add chicken breasts. Brown on each side (about 5 minutes. Add veggies and allow to cook until softened (10 minutes). Add mushrooms, cook for another 5 minutes, then add marinara sauce and spices..

Remove squash from oven, and use a fork to remove the flesh from the rind. Stir into chicken mixture, top with parmesan cheese and serve.
