Ingredients
Healthy Harvest Pasta, Rotini, 8 oz 4 cup, Broccoli, fresh,chopped 4 cup Cauliflower, raw chopped1/2 cup Sweet peppers (bell)1/2 cup Onions, raw, chopped Garlic, 2 clove, pressed3 tbsp Butter, salted1/3 cup Flour, white1 & 1/2 cup Skim Milk3/4 cup Cottage Cheese, 1% Milkfat 1 cup Sour Cream, reduced fat1 10oz can cream of broccoli cheese soup 98% fat free serving (remove)1/2 cup Shredded Mozzarela
Directions
Boil pasta according to package directions for 5 minutes, add broccoli and cauliflower and boil an additional 3 minutes. Add peppers & onions and boil 1 more minute. Drain. Melt butter and saute garlic. Add flour to butter garlic mixture, stir in milk with wire wisk. Add cheeses, sour cream & soup. Stir cheese sauce into pasta & veg and bake at 350 degrees for 30 minutes.
