Low Fat Oatmeal Pancakes

1/2 cup dry Oatmeal ,3/4 cup Nonfat Greek Yogurt1/2 cup skim Milk3 tsp packed Brown Sugar2 large egg white, fresh1 tsp Vanilla Extract1/4 cup whole grain flour3 tbsp freshly ground flax seeds1/2 tsp Baking Powder1/4 tsp Salt
Place the oatmeal, greek yoghurt and milk in a bowl and stir to combine. Leave for 15 minutes or so to soak.
In a mixing bowl whip together the egg white, vanilla and brown sugar until light and fluffy.
Fold in the rest of the dry ingredients adding a little more milk if necessary to make a soft dropping consistency.
Wipe a non-stick pan with oil and fry large spoonfuls of mixture, flipping once when bubbles appear on the surface of the uncooked side of the pancake.
Serve with your favourite topping.
