low carb fluffy tapioka pudding

Ingredients
tapioka, dry, 3 tbs*Egg white, 1 serving *Splenda, 18 tsp/ 6 tbs divided*Milk, 2%, 2 cup Vanilla Extract, 1 tsp
Directions
in medium sauce pan mix:
tapioka, dry, 3 tbs
*Egg white, 1 serving
3 tbs splenda
and 2 cups of 2% milk
Set Aside.
in a seperate bowl beat egg white with a mixer on high until foamy. Slowly add 3 tbs splenda. Beat until reaches soft peaks.
Put the sauce pan on the stove. Cook on medium high heat stirring constantly until it comes to a full rolling boil.
Remove from heat. Quickly stir in egg white until well blended, then stir in vanilla. cool 20 minutes. serve warm or cold. makes 6 servings.
