2 lbs tripe (cow belly)Onions, raw, 1 large Garlic, 3 cloves Water, tap, 16 cup (8 fl oz) Hominy, 1 cup Cilantro, raw, 6 tbsp Oregano, ground, 2 tbsp Peppers, sweet, red, raw, sliced, .15 cup Pepper, black, 1 tbsp Jalapeno Peppers, 3 pepper *Pepper, ancho, dried, 2 pepper
Wash tripe thoroughly, cut into bite size pieces and combine in a large pot. Bring to boil and simmer slowly until hominy opens and is cooked. Skim off grease. It is best if you can refrigarate it in order to remove all grease. Tripe should be tender but not too mushy/soft.
Serve in large deep bowl. Sprinkle with fresh cilantro, chopped green onions, limon and hot tortillas. Makes 7 to 8 servings. Servings are about 4 cups each.
