potato stuffing

Ingredients
3 medium potatoes, peeled and quarteredBoiling water1 cup milk1/4 cup hard margarine1 1/4 cup chopped onion1/2 cup chopped celery5 cups plain croutons1 1/2 tsp summer savory1 tsp salt1/4 tsp pepper
Directions

Cook potatoes in boiling water until tender. Drain and mash well.
Add milk. Mash. Mixture will be runny
Melt margarine in frying pan. Add onion and celery. Saute until soft. Turn into large container. Add mashed potato.
Add croutons, parsley, savory, salt and pepper. Toss well and let stand for 30 minutes so croutons can absorb moisture. If not moist enough more water can be added. Stuff bird or put in a cassarole dish.
