Shepherd Pie - Vegetarian

Ingredients
Boca Meatless Group Crumbles - 1.5 cups (1/2 pkg)Mixed Vegetables, Frozen - 1 pkg (10 oz)Campbell's Cream of Mushroom Soup 98% Fat Free - 1 canHungry Jack Instant Mashed Potatoes - 1.5 cupsOnion, diced - 1/2 cupOlive Oil - 2 tsp
Directions
Preheat oven to 375 degrees.

Dice onion - microwave for 2-3 minutes, until soft.
Steam veggies in microwave according to directions.
Heat oil in non-stick pan. Add Boca crumbles and softened onion. Cook until Boca no longer frozen and completely heated through.

Add mixed veggies and can of soup. Heat through, adding a little water if needed.

Pour into casserole dish.

Prepare instant potatoes according to package to make 1.5 cups. Spoon potatoes over vegetable mixture.

Bake at 375 degrees for 30-45 minutes.
