Whole Wheat Chocolate Chip Pancakes

Ingredients
1.75 c white whole wheat flour2 T sugar4 tsp baking powder.25 tsp baking soda.75 tsp salt1.75 c buttermilk2.5 T oil.25 c mini chocolate chips2 T ground flaxseed6 oz. hot water
Directions
Combine flaxseed and hot water and whisk together. Let sit for a minute to gel up. (Alternately, use 2 eggs.)

Combine all ingredients well. Cook pancakes on hot griddle coated with cooking spray for a few minutes on each side.

Serving Size: makes 32 small pancakes
