Orange – Mocofu Cheesecake

1 ½ cup chocolate wafer crumbs2 tbsp orange juice1 tbsp Kahlua 8 oz silken lite firm tofu½ cup part-skim, smooth ricotta cheese2 tbsp light cream cheese1/3 cup maple or rice syrup2 egg whites 1 egg 2 tbsp Kahlua1 tbsp Grand Marnier¼ cup cocoa powder
Preheat oven to 350°F.
Mix the wafer crumbs with the orange juice and coffee liqueur until combined. Press into a 9-inch spring form pan.
Bake 10 minutes, allow to cool thoroughly.
Combine tofu, ricotta, cream cheese, maple syrup, egg white, egg, Kahlua, Grand Marnier and cocoa powder in a food processor until smooth.
Spread evenly over the crust and bake for 1 hour or until set.
Chill overnight before serving.
