Apple Quinoa Salad with Curry Dressing

1/4 cup raw whole almonds1 cup bulk white Quinoa1 teaspoon honey1 tablespoon finely chopped organic shallot1 teaspoon curry powder1/4 teaspoon course salt2 tablespoons fresh lemon juiceFreshly ground pepper2 tablespoons extra-virgin olive oil1/4 cup dried currants or dried cherries. (recipe calculated with cherries)1 med apple, cut into 1/8-inch-wedges1/4 cup fresh mint, coarsely chopped,
Toast almonds until fragrant in 375F for about 7 min
Rinse quinoa thoroughly in a fine sieve and drain. Bring 2 cups of water to a boil in saucepan. Add quinoa, return to boil, sir, cover and simmer until quinoa is tender but still chewy, about 15min.
For the dressing, whisk together honey, shallot, curry power, salt and lemon juice in a large bowl. Season with pepper. Whisking constantly. add olive oil in a slow, steady stream and whisk until emulsified. Add quinoq, currant or cherries, apple, nuts. Toss Well. Garnish with mint.
Serving Size: makes 4 servings
