Homemade Chicken Soup w/Potatoes & Spinach

2 cups acorn squash, peeled and cubed2 cups potatoes, peeled and cubed2 cups carrots, chopped1 cup celery, raw, choped1 cups onions, chopped2 cloves garlic, chopped2 cups Chicken stock, home-prepared4 qts water2 tbsp dried Parsley1 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend1 tsp Badia Herbes de Provence2 whole Bay Leaves4 cups fresh spinach, chopped
Prep all the veggies. Combine everything except the spinach in a large stock pot or dutch oven. Add the seasonings of your choosing to taste. Bring to a boil over high heat, then reduce by half and simmer for about 1 hour. Add spinach and cook until tender.
