Water, purified, 2 1/2 cupsAmaranth Grain, 1 cupRaisins, 1/4 cup (not packed)Coconut Oil, 1 tbsp maple extract, 1/2 tsp Cinnamon, ground, 1/4 tsp Salt, 1/4 tsp
Heat coconut oil over medium-high heat until liquid. Add dry amaranth & toast stirring frequently until it begins to just change color & smell fragrant. Add water & rest of ingredients, mixing well. Bring to a boil, stirring frequently, then cover, reduce heat & simmer until water is absorbed (about 20 minutes), stirring once or twice.
Let stand 5 minutes, then serve with desired sweetener & a little almond milk (not included in nutritional data).
