Healthy Chicken Curry

Ingredients
1 lb of cut up chicken breast-no skin boneless4 large cut in chunks raw potatoeabout 4 cups of chicken broth2Tbs olive oil1 can chopped tomatoes 1 cup chopped onions3 cloves of minced garlic1 tbs approx of curry1 teasp turmericsalt and pepperred pepper if you like it warm
Directions
Heat oil in a large pot, saute onion -seasoned with salt and pepper and some of curry, add garlic. then add bite size chicken breast and brown. Then add chunks of potatoes -also seasoned with salt and pepper to taste and a little curry. Add chicken broth, tomatoes and rest of seasoning. cook unitl potatoes are done..note: broth should cover potatoes..add salt and pepper and curry and turmeric and red pepper to taste..May be served over rice (basmati is best) for extra carbs and calories..I use a bed of veggies like sauteed green beans, zucchini, or broccoli..Enjoy
