Banana Carrot Muffins

Ingredients
1 cup all purpose flour1/2 cup whole wheat flour3/4 cup sugar1 tsp. baking powder1 tsp. baking soda1/2 tsp. salt1/2 tsp. cinnamon1/2 tsp. nutmeg2 eggs, separated1 tbsp. honey1/4 tsp. grated orange peel2 medium ripe bananas, mashed1 cup shredded carrots1/2 cup unsweetened apple sauce
Directions
In a large bowl, combine the first 7 ingredients. In a small mixing bowl beat egg yolks until light and lemon colored. Beat in honey and orange peel. Fold in bananas, carrots, and applesauce. Stir into dry ingredients until just moistened.
In another small bowl, beat egg whites until stiff peaks form. Fold into muffin batter.
Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees for 18-22 minutes, or until toothpick inserted comes out clean. Cool for 5 minutes before removing from pan.
