Carrot Ginger Soup with Tahini

Ingredients
3 large carrots, peeled and chopped2 tsp. ginger1 tsp. cinnamon1 tsp. cumin (ground)1.5 tbsp. tahini (sesame paste)
Directions
3 servings.

Place the carrots in a small soup pot and add enough water to cover the carrots plus an additional two inches. Over high heat, bring the carrots to a rapid boil, adding more water if needed. Add the ginger, cinnamon and cumin. When the carrots are soft, remove fom heat and transfer them to a blender or food processor with the cooking liquid and an additional 2 cups of water. Blend until smooth. Ladle into three bowls, and drizzle the top of each with half a tablespoon of tahini.
