3tbsp olive oil2 tbsp butter1-2 medium onions, finely chopped1 large carrot, finely chopped3 celery stalks, finely chopped4-5 garlic cloves, finely chopped1c whole milk1/2lb ground veal1/2lb organic ground beef (84/16)1/2lb organic ground beef (90/10)1 small can tomato paste1/2
Heat butter & olive oil in a large dutch oven.
Add all vegetables and saute until translucent.
Add all meat to dutch oven and brown slightly.
Add milk until all liquid is reduced.
Add tomatoes and tomato paste.
Simmer for 90 min
Serve over polenta.
