Migas with Mushrooms and soy chorizo

2 oz. soy chorizo1/4 c. of finely diced mushrooms1 large egg1tbl light butter1 tsp fat free half and half1 wedge laughing cow chipolte freso cheese7 nacho flavored nut chips
chop mushrooms into fine bits,melt butter and brown mushrooms in omelet skillet, then dump water if any out of pan, add in soy chorizo and brown, in a bowl beat egg,half and half and salt and pepper. Once chorizo is brown add in egg and scramble. remove from pan and put in microwaveable bowl. Cut up cheese wedge and lay on top of eggs, microwave for 20 sec or until cheese softens enough to stir into the eggs completely. Serve with 7 nacho cheese nut chips and fresh pico de gallo.
