Creamy Harvest Soup

Ingredients
2 Cups of carrots1 Cup of cabbage chopped1 Cup of cauliflower1 Medium sweet potato1 Medium white potato1/2 Cup onion chopped 1 Cup of water1 Cup of beef broth2 Cups of chicken broth
Directions
Saute the 1/2 cup of chopped onion and add with all other ingredients in a 3 quart pot. Simmer for 25 - 30 minutes until all veggies are soft. Let it cool for 10 minutes and then add to blender 2 cups at a time until all is pureed. Pour back into pot and reheat. At this time you can add the cooked meat if you wish. Serve with a sprig of parsley for decoration or portion and freeze for quick lunches on the go.
