Portabello Philly Cheese "steak"

Ingredients
2 tsp extra virgin olive oil1 medium onion chopped or sliced4 large portabello mushrooms sliced1 large red bell pepper sliced2 tsp oregano1/2 tsp ground pepper1 tbsp flour1/4 cup vegetable broth1 tbsp reduced sodium soy sauce
Directions
Heat oil in a skillet over medium heat. Add onion and cook until soft and beginning to brown (2-3 min). Add mushrooms, bell pepper, and spices stirring often until veggies are soft.

Reduce heat to low and sprinkle the vegetables with flour. Stir to coat. Stir in the broth and soy sauce, and bring to a simmer. Use in hoagie rolls with cheese or as desired.
