1 lb. boneless, skinless chicken breast, cut into small strips1 zucchini, diced1 bell pepper, diced1/2 onion, diced3/4 cup black beans (1/2 can), reduced sodium8 tbsp. marinade of choice8 low carb whole wheat tortillas, taco size1 oz. lime juice1 tbsp. finely chopped fresh cilantro (or 1/2 tbsp. dried)1/2 cup shredded cheddar (2% milk)8 tbsp. of fat-free sour cream16 tbsp. of chunky salsa1 cup of shredded lettuce
* Mix together chicken breast strips and vegetables with marinade. Marinate for 30-60 minutes.
* Saute chicken and vegetables in marinade until chicken is completely cooked and vegetables are tender; approximately 15 minutes over medium heat.
* Layer chicken and vegetables in the tortillas.
* Top with remaining ingredients as desired.
