Super Easy Chocolate Cupcakes

Ingredients
1 1/2 c. all purpose flour1/4 cup unsweetened cocoa1 cup granulated sugar1 tsp. baking soda1/2 tsp. salt1 cup brewed coffee or 1 cup warm water mixed with 1 1/2 tsp espresso powder1 tbsp white vinegar2 tsp vanilla extract6 tbsp olive oil
Directions
Preheat oven to 350F. Whisk together dry ingredients (through salt) until there are no visible clumps. In a seperate bowl, combine the rest of the ingredients and pour into dry ingredients. Stir until just combined. Fill muffin cups 2/3rds full and bake for 18-20 min or until a toothpick inserted into middle comes out clean. Remove from oven and let cool 5 minutes, then remove from pan to a cooling rack.
