Dithmarscher Leek Soup

Ingredients
50g Olive Oil500g (a generous pound) leeks, cut in rings1-2 onions, roughly chopped2 wedges Laughing Cow cheese (or any similar cheese)125g Ham, extra lean1/4 cup evaporated skim milk750ml (3 cups) chicken brothWater, as neededSalt, Pepper, Sugar to taste
Directions
Heat leeks and onion in oil, add the broth and bring to a boil. Add salt, pepper and sugar as needed. Let simmer for 20 minutes. Add the cheese wedges, ham and evaporated skim milk and let it all melt. Add water, salt, pepper and sugar as needed.
Enjoy!

You can leave out the ham and use vegetable broth to make it a vegetarian dish or use ground beef or ground turkey instead of the ham. It's up to you.
