Chicken Ricotta Veggie Stuffed Crepes

Ingredients
Crepes (make basic crepe recipe)Red PeppersMushroomsOnionZucchiniSpinach, FreshChicken BreastRicotta CheeseParmesan Cheese
Directions
1. saunte chicken with onions, mushrooms, zucchini and set aside
2. mix ricotta cheese with garlic powder, salt, pepper, chopped parsley, parmesan cheese, thyme and set aside
3. make crepes
4. spread ricotta cheese mixture on crepe, put 2 fresh spinach leaves on top of cheese, add layer of saunted veggies and chicken
5. roll crepe with stuffing like a burrito or taco (your choice)
