Vee's Venison Chili

Ingredients
Onions, raw, 1 medium (2-1/2" dia)Celery, cooked, 1 cup, dicedChili powder, 3 to 5 tbsp, to tasteVenison, 6 serving ( 3 oz )Beans, red kidney, 4 cupCanned Tomatoes, 5 cupMushrooms, cooked, 2 cup piecesCanola Oil, 2 tbspOlive Oil, 2 tbspSalt and pepper to taste
Directions
Heat oils in chili pot, at medium heat. Sautee onions, celery until soft. Add mushrooms next, if you prefer a little carmelized flavour. Then add beans and tomatoes and bring it all to a simmer. While the veggies are heating up, toast the chili powder in a non-stick pan, then brown the venison in the same pan before adding it to the chili pot.

Let simmer for 2 to 3 hours.
