Microwave Healthy Stuffed Potato

Ingredients
1 small potato1 cup frozen stir fry vegatablessalt to tasteOptional for meal1 oz low fat cheeze 2 oz cubed turkey
Directions
for each serving
1. Wash a small baking potato and pierce with a fork. (3 oz)
2. Place 1 cup frozen stir fry veggies in a glass dish and cover with a glass lid or plastic wrap.
3. Place both items in the microwave and cook 5 minutes. Check the potato and make sure it is cooked enough.
4. The veggies should be warm and crisp.
5. Cut the potato in half and cover with the veggies. Salt to taste if needed.
6. For a meal add low fat cheeze and turkey
