Bulgur Lentil Salad

1/2 Cup green lentils.2 1/2 Cups water1 Tablespoon tomato paste1 whole bay leaf1/4 Cup Bulgur, fine or medium ground1/4 teaspoon ground cumin1/8 teaspoon ground cinnamon3 green olives, chopped1/2 cup Feta cheese, crumbledServe over Lettuce
Put 2 1/2 cups of water in a pan with the green lentils. Add the tomatoe paste and bay leaf (1). Bring to a boil and then simmer for about 30 minutes. Meanwhile boil 1/2 cup of water and pour over bulgur. Add the spices. Cover and let set 15-20 minutes, or until all water has been absorbed. Fluff with a fork. Drain lentils, when done, if necessary. Let cool. Add the chopped feta and 3 green olives, large to the lentils. Mix with the bulgur. Serve over lettuce. Add a lemon vinaigrette and drizzle over, if desired . (Not figured into calorie count).
